The founders of a Fijian ethical cocoa farm and chocolate making company will host a workshop at the Shoalhaven Regional Gallery this Easter, offering participants a unique opportunity to taste the tantalising delicacies they create.
Anne Moorhead and Richard Markham established KokoMana, a small social enterprise near the seaside town of Savusavu in Fiji, in 2018.
Richard manages the cocoa farm, an environmentally friendly agroforestry plantation set in the tropical rainforest, while Anne oversees chocolate production in the small on-site chocolate factory.
Anne has also been exploring chocolate as a creative material for several years, inspired by the beauty of Fiji's rainforest. More recently, Anne has drawn inspiration for her chocolate craft from the spectacular Shoalhaven environment, where the couple also have a home.
Those who attend the workshops during April will receive one kilogram of ethical chocolate to work with. Participants will learn about tempering chocolate using the tabling method on a marble slab and will have a choice of moulds to make chocolate leaves, shells, banksia cones, and other edible shapes.
While the chocolate sets, Anne and Richard will explain small-scale, ethical chocolate production, and provide a tasting to highlight the difference between fine-flavour, single-origin chocolate and mass-produced, commercial chocolate.
The workshops will be held at the Shoalhaven Regional Gallery in Nowra at the following dates and times:
- Saturday 5 April, 10am-1pm
- Saturday 12 April, 10am-1pm (family friendly).
The cost to attend is $130 per person and all materials will be included for the three-hour sessions.
