Savor Summer: Leatherwood Honey Recipe Delights

Summer is in full swing, and there's no better way to enjoy the season than with great food and friends, especially on New Year's Eve.

The Tasmanian Beekeepers Association and Tasmanian celebrity chef Ben Milbourne have teamed up to create a number of summer recipes that incorporate Leatherwood Honey.

Tasmanian Beekeepers Association president Lindsay Bourke says the recipes were developed as part of the 7 Network TV series 'Left Off the Map'.

"During 2024, the Left Off the Map series was filmed in Tasmania, with Ben Milbourne and other presenters showing just what amazing food our island has.

"In Tasmania, we are so lucky to have the best food and the cleanest air in the world; nowhere else comes close.

"Leatherwood Honey is without a doubt the best and most unique honey in the world; it's only produced in Tasmania, being derived from the nectar of the leatherwood tree (Eucryphia lucida).

"Eucryphia lucida is only found on Tasmania's rugged west coast and in the Wilderness World Heritage Area. Leatherwood Honey is truly the taste of the Tasmanian Wilderness World Heritage Area." Mr Bourke said.

He says Leatherwood Honey pairs perfectly with fresh, seasonal produce, creating a symphony of flavours that will tantalise your taste buds and impress your guests, perfect for a New Year's Eve gathering.

Mr Bourke recommends three unique recipes from the Left off the Map series: Greek Prawn and Fish Salad, accompanied by Beetroot and Blueberry Salad, and followed by a Goat Cheese Tart. (Details in the Dropbox links below.)
